Ingredients
- 1 large handful of chopped romain lettuce (or spring mix)
- 3/4 cup cooked pinto beans
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp cumin
- 1 -2 yukon gold potatoes, diced
- 2 tablespoons of pico de gallo (made with diced roma tomato, red onion, jalapeño, cilantro, lime juice)
Instructions
- Cook the diced potatoes in an airfryer or on a baking tray for 20 minutes on 450f.
- Warm the cooked pinto beans on the stovetop or in the microwave and season them with the garlic powder, onion powder and cumin.
- On a large plate, place the chopped lettuce, then the potatoes and beans and top with the pico de gallo. optional: 1/2 cup of corn mixed in.
