This is a very easy soup recipe that I came up with on the spot! Curry powder and cumin make this filling soup VERY flavorful.
Ingredients:
1 x cup pearl couscous
1 x can great northern beans / cannellini beans
2 x russet potatoes with skin, diced
1 x large yellow onion, diced
1.5 x cup broccoli florets (frozen)
4.5 – 5.5 cups of water (depending on how dry/watery you like your soups!)
1 x tsp garlic powder
1 x tsp curry powder
1 x tsp cumin
1/2 tsp chili flakes
optional: pinch of sea salt
Directions:
1. Dice onion and sautee with 1/2 cup of water on medium heat in a large soup pot with the lid on for 5 mins. Stir often so that the onion doesn’t stick to the pot.
2. Add in diced potatoes, broccoli, 4.5 cups of water, curry powder, cumin, garlic powder, and chili flakes and a can of great northern beans (rinsed).
3. Turn up to med/high heat to bring to a boil – once boiling, add in 1 cup of pearl couscous. Cook for 8-10 mins.
4. Pour into a bowl and enjoy.
This recipe makes 2 large bowls full. If you are meal prepping, use glass containers with airtight lids. This will last in the fridge for 4 days. Great for meal prepped lunches for the week!
