Do not underestimate the power of EASY MEALS when it comes to weight loss. 

When you are pressed for time and hungry – the last thing you feel like doing is following a complicated recipe and spending an hour cooking dinner.   Instead, you might be likely to listen to the voice in your head that says “just order pizza – you’ve had a tough day, you’ve earned it!”  – and before you know it, you’re ‘indulging’ every other night and have been derailed from your health and weight loss goals.  It happens! It’s life.  BUT – I will say that having a few “go-to” EASY low calorie density meals that you enjoy eating can help!  This one is so simple, versatile and delicious.
Step One.  Bake a sweet potato (OR – meal prep on Sunday night and bake 4-5 sweet potatoes, so you have them ready mealtimes in the week)
Open a can of chickpeas / black beans / lentils and rinse them well.
Cook some frozen broccoli with a splash of water in a frying pan on the stovetop (5-7 mins should do it).
Pour 1/2 can of the chickpeas into the pan with the broccoli at the end for 1 minute to warm them up.
Serve everything on a large dinner plate and enjoy with your favorite spices and/or seasonings!
Suggestions: drizzle of ketchup, splash of soy sauce, lemon/lime juice, sea salt, pepper, garlic powder, onion powder, chili flakes, etc.
You can also meal prep this for lunches!
