Berry & Quinoa Salad – Low Calorie Density Recipe

This is a refreshing salad that is filling and very easy to prepare.

Ingredients

1 cup Quinoa (dry, uncooked)
1 cup Strawberries (chopped)
1 cup Blueberries (chopped)
1/3 Yellow Onion (diced)

3 tbsp Balsamic Vinegar

1 1/2 tbsp Lime Juice

1 1/2 tsp Dijon Mustard

2 cups Organic Mixed Salad Greens

Instructions 

  1. Cook the quinoa according to the package directions. When the quinoa is cooked, let it cool.
  2. Meanwhile, in a mixing bowl combine the strawberries, blueberries and onion.
  3. In a jar with a lid, add the balsamic vinegar, lime juice, dijon mustard and shake until well combined.
  4. To assemble the salad, divide the lettuce between bowls and top with the quinoa and then the berries. Drizzle with the balsamic dressing. Enjoy!

Notes

For Leftovers:

Refrigerate in an airtight container for up to two days. Assemble the salad just before serving.

For More Protein:

Add half a cup of chickpeas or lentils

More Veggies to Lower the Calorie Density Even More:

Add 1/2 chopped cucumber or 1/2 bell pepper.
