This is a super easy mashed potato-type dish – that takes less than 20 minutes to make. Get creative with it and add your favorites spices.
Ingredients:
- 2 medium russett potatoes
- 1/2 carrot
- 1/2 yellow onion
- 7-8 mushrooms
- 1/2 cup corn
- 1/2 tsp cayenne pepper
- 1/2 tsp cumin
- a drizzle of ketchup
- optional: garlic powder
Instructions:
- Dice the potatoes, carrot and onion
- Add them to a frying pan with 1 cup of water, cook on medium-high head and cover with a lid for 5 mins.
- Uncover and cook for another 5 minutes (allowing most of the water to absorb) – stir often.
- Once the potatoes are soft, add the frozen corn and the diced mushrooms.
- Add a splash more water (1/3 cup) – if needed.
- Put the lid on and cook for another 7-8 minutes.
- Add in the cumin, cayenne pepper and garlic powder (or any of your preferred spices)
- Once most of the water has absorbed, it’s ready to be served on a plate!
- Add a drizzle of ketchup and enjoy.
