Ingredients
- 4-5 medium white potatoes with skin, chopped into cubes
- 1/2 cup red lentils
- 1 large onion
- 4-5 garlic cloves
- 1 large head of cauliflower, chopped
- 1 tsp freshly grated turmeric
- 1/2 tsp black pepper
- 1 tbsp chili flakes
- 1/2 tsp cumin powder
- 1 tsp chili powder
- 1.5 tsp Caribbean spice blend
- 1 tsp onion powder
- 4 cups of fresh organic baby spinach
- 5 cups of water
- salt to taste
Instructions
- Combine all ingredients in an Instantpot. Cook for 10 minutes and do a quick release. Blend it with an immersion blender while leaving some chunks. Add fresh baby spinach and combine. Serve and enjoy!
Stovetop Cooking Instructions: Add all ingredients to a large soup pot and cook for 20-25 minutes until potatoes are soft. Lightly mash ingredients with a fork, leaving some chunks.
