Easy Sunday Afternoon Food Prepping for the Week – Low Calorie Density

Food prepping will change your life! Seriously. I don’t know why I didn’t start doing this years ago. It saves SO much time and energy in the week. I decided to prep some starches today so I don’t have to chop/peel/slice/bake/boil food for hours in the week. I’ve been noticing how much easier weekday lunches have been now that I have a lot of cooked wet starches like potatoes, barley, and rice ready-to-eat and stored in airtight containers in the fridge.

I thought I’d share with you what I did to give you a few easy food prepping ideas that can save you time and energy in the week.

I cooked 2 cups dry red lentils and 2 cup dry barley.

Cooked barley. Suggestions: add a scoop to vegetable soups to make them more hearty OR enjoy it as an oatmeal replacement – with cinnamon, blueberries and a splash of unsweetened plant milk. TIP: Make a big batch of barley and freeze some – it freezes very well!
I cooked 2 cup of Thai jasmine rice – Alex and I ate 1/2 of what was made with our dinner tonight and the rest was put into this glass container.
Smoothie prep: 1 ripe banana, a few sweet dark cherries, mango chunks and a small handful kale (washed well, stem-removed).
I had a few containers of strawberries that needed to be eaten – and since I haven’t been reaching for them, I figured I’d remove the crowns, rinse them and chop them with my nutrichopper. (WAY easier than slicing them on a chopping board).
I placed them into this glass container and put it in the fridge. Next time I make oatmeal, I’ll scoop some of the strawberry chunks out and sprinkle them on top.
I baked 5 small russet potatoes that needed to be eaten.
I placed the baked potatoes in these glass containers and Alex and I will eat them this week.
